The “Passito Sicilia” has a golden yellow color with amber golden highlights, the nose offers a fruity bouquet with notes of apricot, dry figs, citrus , dates and honey. The taste is harmonious, sweet and delicate, fresh and gently alcoholic. A dessert wine that goes perfectly with Sicilian pastries like cannoli and cassata, creamy desserts and ice-creams; it’s perfect also with blue and tang cheeses. It’s a perfect meditation wine.
Colosi Passito IGP
The grapes, exclusively picked by hand and harvested between the end of August and the beginning of September, will be letting dry under the sun for 12/14 days.
Once dried, they are mixed with grapes and soon pressed in order to obtain a thick and sugar juice which then is fermented in stainless steel tanks. Once reached the alcoholic degree and sugar proof, the fermentation is blocked drastically lowing the temperature.
Finally the wine is refined in steel for about 6 months.
