A wine that perfectly tells what Sicily is, with the scents of earth burned by the sun and invigorated by the wind: salt, citrus and aromatic herbs, dried straw and hawthorn. This wine is an explosion of flavors, thanks to the bond among freshness, minerality and smoothness. Fragrances of white and tropical fruit prevail. Harmonious, fresh and elegantly soft. The grapes are collected during the second decay of September.
After a brief press maceration to obtain the extraction of the aromatic compounds, the must is fermented in stainless steel tanks, with low temperature and for almost 12-14 days
Finally, the wine is refined in stainless steel tanks for 4/5 months and then is left in bottles for about 1 months
